When I moved into my new home in Nashville, my grandmother gave me a tiny six-inch cast iron skillet that has been in my family for nearly 100 years.
She made me solemnly swear to always season it with hot butter before cooking, never ever to use dish detergent or put it in the dishwasher, and to make the most delicious cornbread that I could muster.
To this end, she also gave me her recipe (which I halve to fit in this adorable tiny pan.) And today, I'm sharing it with you, because it's time for you to make your own traditions and for your home to be filled with this warm scent.
1) preheat oven to 425. place butter in pan and slide in oven while it heats. (this is the secret to a crispy crust- heat + butter!)
2) mix meal, milk and egg; pour in hot oil from pan.
3) pour into hot pan.
4) bake 20-30 minutes until brown and crispy.
5) eat with someone you love.
